Microgreen Salad - Ultimate Reset Phase 1

One of my favorite recipes that I've made a few times throughout the entire 3 phases of the Ultimate Reset.



Ingredients

  • 1/2 tomato, chopped
  • 1/4 cup broccoli
  • 1/4 shredded carrot
  • 1/2 cucumber chopped
  • 1/4 red pepper, chopped
  • 3 cups baby salad greens
  • 1/3 cup toasted pumpkin seeds
  • 2 tbsp, dressing of choice
You can also add some cooked quinoa for extra deliciousness! 



Toss all together and enjoy!!

Farina with Walnuts, Apples, and Maple Syrup - Ultimate Reset Phase 1


What a delicious breakfast!!!! I've never heard of Farina before. It is actually a hot cereal (also known as cream of wheat).



Ingredients: 


  • 3/4 cup water
  • 3 tbsp Farina cereal
  • 1/2 medium green apple, diced
  • 3 tbsp chopped walnuts
  • 1 tbsp pure maple syrup

Directions:

  1. Bring water to boil in medium saucepan over medium heat. Add farina; cook, stirring frequently, for 4-5 minutes. Remove from heat.
  2. Place farina in small bowl and top with apples, walnuts, and maple syrup.

Southwestern Veggie Taco - Ultimate Reset Phase 1

Now THIS is the recipe that I can not stop ranting and raving about. I will never make chicken, beef, or shrimp tacos at home again!!


Ingredients: 

  • 1/4 medium avocado, mashed
  • 2 tbsp fresh salsa (pico de gallo)
  • 1/4 cup Black Beans and Rice (recipe below)
  • 1/4 cup cooked corn kernels
  • 1 (6-inch) corn tortilla

Directions: 



  1. Combine mashed avocado and fresh salsa in small bowl, mix well. Set aside.
  2. Place Black Beans and Rice and corn on one half of tortilla; fold.
  3. Serve with avocado and salsa mixture. 
There will be tons of rice and beans leftover! Enjoy on the side! I also have combined all of the above ingredients in a bowl and it was just as delicious!! 


Rice and Beans Recipe 

Ingredients: 

  • 1/2 cup canned low-sodium black beans, drained
  • 1/4 tsp extra virgin olive oil
  • 1 dash ground chili powder
  • 1 pinch ground cumin
  • 1/4 tsp ground coriander
  • 1 tsp Bragg Liquid Aminos
  • Himalayan salt, to taste
  • 3/4 cup cooked brown rice, hot

Directions: 

  1. Combine beans, oil, chili powder, cumin, coriander, Bragg Liquid Aminos, and salt in a medium saucepan; mix well. 
  2. Heat mixture over medium-low heat for 1-2 minutes, or until heated through. Remove from heat.
  3. Gently fold rice into bean mixture.

Stir-Fried Veggies - Ultimate Reset Phase 1

This is a delicious side dish or main meal!! With the Reset, I was supposed to have quinoa and a baked sweet potato with it. I mixed the veggies with the quinoa. My hubby approved!! And he never does!!



Ingredients:

  • 1 1/2 tsp coconut oil
  • 1 tsp sesame oil
  • 1/2 medium carrot, cut into diagonal slices
  • 1/4 cup broccoli florets
  • 1/4 medium bell pepper, sliced
  • 1/4 medium zucchini, sliced
  • 1 1/2 tsp Bragg Liquid Aminos

Directions: 
  1. Heat coconut and sesame oils in large skillet over medium-high heat. Add carrot; cook, stirring constantly, for 1-2 minutes. 
  2. Add broccoli; cook, stirring frequently, for 4 to 5 minutes. Add bell pepper and zucchini. Cook 2-3 minutes, or until tender-crisp. Turn off heat. 
  3. Add Bragg Liquid Aminos. Mix well. 

Enjoy!!! 

Quinoa Salad - Ultimate Reset Phase 1

If it wasn't for the Ultimate Reset, I would never choose to make a quinoa salad. I've only made quinoa a handful of times and it was never a great experience. This, however, is a game changer.


Ingredients: 

  • 1/2 cup cooked quinoa
  • 1/2 tomato, chopped
  • 1/2 cucumber, chopped
  • 2 tbsp kalamata olives, chopped
  • Mint leaves, 1 tbsp finely chopped
  • Parsley leaves, 2 tbsp finely chopped
  • 1 tbsp extra virgin olive oil 
  • Himalayan sea salt, to taste
  • Bragg Liquid Amino, to taste

Directions: 

  1. Toss all together.
  2. Marinate in refrigerator for 2 hours before serving.

Oatmeal with Blueberries - Ultimate Reset Phase 1

This breakfast actually made me fall in love with blueberries! Usually I am a strawberry only type of girl!



Ingredients

  • 1/2 cup rolled oats (also can use steel-cut oats)
  • 1 cup water
  • Pinch of himalayan salt
  • 1 cup fresh blueberries 

Directions

  1. Boil 1 cup of water on stove.
  2. Add salt and rolled oats. 
  3. Stir frequently for 4-5 minutes. 
  4. Remove from heat. 
  5. Add blueberries.

Strawberry Peanut Butter Oatmeal

When you are tired of the normal breakfast of eggs.. this is a great alternative! I got this recipe from the 21 Day Fix Extreme meal plan. I'm not a huge fan of oatmeal and when I heard it includes strawberries and peanut butter, it actually sounds like a disgusting combination. But I couldn't be more wrong!! I am so glad I gave it a shot!

Fixers: 1 yellow, 1 purple, 1 tsp


Ingredients: 


  • 1 cup of water
  • Pinch of sea salt
  • 1/4 cup of steel cut oats
  • 1 tsp all natural peanut butter 
  • 1 cup of sliced strawberries

Directions:

  1. Bring water and salt to a boil in medium sauce pan over medium-high heat. Reduce heat to low. 
  2. Add oats and cook, stirring frequently for about 15 or so minutes, or until water is just absorbed. Remove from heat and let stand for 5 minutes. 
  3. Add peanut butter and mix well. 
  4. Top with strawberries!

Samoa Shakeology


It's that time for Girl Scout Cookies!!!! Who else loves Samoas as much as I do??! I could probably eat a whole box myself! Whoever came up with this recipe, I thank you! 


Ingredients: 

  • 1 scoop of Chocolate Shakeology
  • 1 cup of unsweetened almond milk
  • Some ice
  • 1/2 teaspoon caramel extract
  • 1/2 teaspoon coconut extract
  • Sprinkle of unsweetened coconut

Directions: 

  1. Blend together
  2. Enjoy!

Strawberry Banana Shakeology


If you love Strawberry Banana smoothies like I do then this one is for you!!! 


Ingredients: 

  • Water
  • Ice
  • 1 scoop of Strawberry Shakeology
  • 1/4 cup of fresh strawberries
  • 1/2 banana

Directions: 

  1. Blend together
  2. Enjoy!


Apple Pie Shakeology

There's no question which is healthier. And most of the times when things are healthier, it doesn't taste as good.... but this is not one of those times!! Fan favorite for many! This is also my go-to recipe when I have vanilla on hand! 



Ingredients:


  • Water
  • Ice
  • 1 scoop of Vanilla Shakeology
  • 1/2 cup unsweetened apple sauce
  • 1/2 tsp ground cinnamon

Directions: 

  1. Blend together
  2. Enjoy!

Chocolate Covered Strawberry Shakeology

This one is delicious! Chocolate covered strawberries in liquid form!


Ingredients: 

  • Water
  • Ice
  • 1 scoop of Chocolate Shakeology
  • 1/2 cup of strawberries


Directions: 

  1. Blend together
  2. Enjoy!


My FAVORITE: Chocolate, PB, and Banana

I think I have been drinking this combination for the last 2 years! No Joke. And it's probably my favorite meal ever!

Chocolate, peanut butter, banana.

Sometimes when I need an extra veggie for the day, I will add kale or spinach. You can't even taste it!


Ingredients:

  • 8 oz water
  • Some crushed ice
  • 1/2 banana
  • Tsp all natural peanut butter
  • 1 cup of kale or spinach
  • 1 scoop of chocolate shakeology

Directions: 
  1. Blend together!! 
  2. Enjoy all the chocolatey goodness!

Caprese Bites

When it comes to party appetizers, most people choose the chicken wings or the buffalo chicken dip or the fried bang bang shrimp (YUM!). There are very limited healthy choices. But these, my friends, are always a hit! And so simple! 


Ingredients: 

  • Cherry tomatoes
  • Mozzarella balls
  • Basil leaves
  • Balsamic dressing
  • Toothpicks

Directions: 
  1. Cut cherry tomatoes in half. This will allow the sticks to stand upright. 
  2. Add mozzarella ball, basil, then half tomato to toothpick.
  3. Drizzle them all with balsamic dressing!
  4. Serve!

Your guests will love them!

Zucchini Noodles with Shrimp

Zoodles!! My newest obsession and this dish is by far my favorite!!!


Ingredients: 

2 zucchini (spiralized)
Crushed tomatoes 
Shrimp
Olive oil
Minced garlic
salt and pepper


Directions: 

1. Spiralize zucchini and steam in large pan with water for a few minutes.
2. Cook shrimp with olive oil, minced garlic, salt and pepper.
3. Combine and add crushed tomatoes. 



SOO Easy!!

Pico de Gallo Chicken

I threw together this recipe because I had chicken and a TON of pico de gallo left from a party I had. It was a favorite from the picky eaters of the household (cough husband cough!) :)

Fixers: 1 red, 1 blue, 2 green, 1 tablespoon


Ingredients: 

  • Boneless, skinless chicken breasts
  • Pico de gallo
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • Salt 
  • Pepper
  • Cheddar cheese

Directions: 

  1. Rub the chicken with olive oil.
  2. Add some pico de gallo to tops of chicken.
  3. Sprinkle the cumin, salt and pepper over the chicken.
  4. Bake at 350 degrees for 35-40 minutes or until done.
  5. Remove the chicken from the oven (drain a little) and add some cheddar cheese on top.
  6. Put chicken back in the oven until cheese is melted. 

I served with a side veggie salad.

California Avocado Toast

Perfect easy lunch!! And so delicious!!

Fixers: 1 yellow, 1 blue, 1/2 red, 1/2 green



Ingredients: 

  • 2 slices of whole wheat bread
  • 1/2 avocado
  • 1 egg
  • 2 slices of turkey bacon
  • 2 slices of tomato

Directions: 

  1. Toast the bread.
  2. Pan fry the egg.
  3. Spread 1/2 avocado on toast.
  4. Add egg, turkey bacon, and tomato.
  5. Season with salt and pepper. 
  6. EAT!

Baked Eggplant

I absolutely loved this dish! I am not usually one to order eggplant parm at the local Italian restaurant but I imagine it is very similar to the one I made! Except my version is healthier!! What what!! :)

Fixers: 1 blue, 1 yellow (pasta), 1 green


Ingredients: 

  • 1 large eggplant, sliced into 1/2-inch thick rounds (12-14 slices)
  • 2 large eggs
  • 2/3 cup plain panko bread crumbs
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • cooking oil spray
  • 2 cups of tomato sauce
  • 8 ounces fresh mozzarella cheese 
  • basil leaves

Directions: 

  1. Pat dry the cut eggplant pieces with a paper towel. Spread out on baking sheet. Lightly season with salt.
  2. Preheat oven to 450 degrees.
  3. In a medium bowl, beat the eggs. 
  4. In another medium bowl, combine the panko, oregano, basil, garlic powder, salt, and pepper.
  5. Dip one slice of eggplant into the eggs, coating both sides and then press ONE side into the breadcrumb mixture. Transfer to a prepared baking sheet.
  6. Spray the tops of the eggplant slices well with cooking oil and bake until the eggplant is soft and the crust is crispy, about 15 minutes. 
  7. Remove the pan from the oven and spoon a heaping tablespoon of sauce on each, followed by a slice of mozzarella.
  8. Return the pan to the oven and bake until cheese is melted, about 3-5 minutes. 
  9. Top with fresh basil and serve. 

I served with a side of whole wheat pasta!! Delicious!
