Popcorn

Cheesy popcorn, buttery popcorn, salty popcorn.... all of the above please! Do you crave popcorn when you go to the movies or watch a movie at home or just hungry at the office and need a snack? I do. Like really do. When I started to be conscious of what I eat, my gut sank thinking I had to cut this out all together. 



As it turns out, popcorn is one of the healthiest snacks. YES, you heard me right!! HEALTHY! Do you know why? 

  1. Polyphenols, which have numerous health benefits, including the prevention of degenerative diseases such as osteoporosis, cardiovascular disease, cancer neurodegenerative diseases and diabetes. 
  2. Whole grains, which contains healthy oils, vitamin E, protein, and many B vitamins and minerals.
  3. Fiber. Popcorn has about 4 grams of dietary fiber for every 4 cups of popcorn! A good fiber intake helps you stay regular, lower your risk of cardiovascular disease, reduce blood cholesterol, and lower your risk of type 2 diabetes by regulating blood sugar.
Although I keep saying, "popcorn is healthy so eat it!," you have to be careful of all the extras that are known to be on popcorn: butter, caramel, cheese, kettle corn, microwaves, oils, etc. 

The healthy alternatives: make it yourself! Stay away from the microwave boxes. Use an air popper, or pop with oil and season with sea salt or a very SMALL amount of butter, if you don't like it plain.

  1. Drizzle extra virgin coconut oil on air popped popcorn. 
  2. Mix.
  3. Sprinkle with cinnamon and nutmeg.
  4. Mix again.

Veggie & Cheddar Omelet

You can do pretty much anything you want with an omelet! The opportunities are endless... and delicious, of course!



  1. Cook the veggies in the pan. 
    • For this omelet, I added green peppers, fresh spinach, mushrooms, red onion, tomatoes, and turkey bacon.
  2. Add eggs, scrambled.
  3. Flip and add cheddar cheese. 
  4. Cover with lid and remove from heat.
  5. Once fully melted, add to a plate.
    • Salt and pepper, if desired.

Panko Crusted Stuffed Chicken

Most of my recipes on my blog will be quick and easy for the busy weeknights and this is one of them! Panko Crusted Stuffed Chicken Breast with Ricotta, Spinach, Tomato, and Basil. I served with a side of spinach, mushrooms, and red onion, which was delish!


Ingredients:

  • 1 cup of low fat ricotta cheese
  • Handful of chopped baby spinach
  • Handful of chopped tomatoes
  • 2 tbsp of parmesan cheese, grated
  • 1 clove garlic, minced
  • 1 tbsp fresh basil, chopped (also can use seasoning if you don't have fresh)
  • Sea salt and pepper to taste
  • 2 chicken breasts
  • Italian seasoned panko crumbs (ok, this might not make it 21 Day Fix approved but I count it as a yellow)



  1. Preheat oven to 400 degrees. 
  2. Combine the ricotta, spinach, tomatoes, parmesan, basil, garlic, salt, and pepper and mix thoroughly. 
  3. Rinse the chicken breasts and cut a long horizontal slit along the center of the chicken breast. 
  4. Fill with cheese mixture.
  5. Dip the chicken breasts in panko bread crumbs and coat each side evenly. 
  6. Season with salt and pepper. 
  7. Throw it in the oven until chicken is fully cooked, between 20-30 minutes.

How Shakeology Saved Me Money

How can you really afford to drink Shakeology?

"Shakeology costs how much??" - said pretty much everyone I talk to

My answer: "Only $4/day!!" in my most excited, high-pitched voice ever. Once I see the crazy look in their eyes, I realize that they are hinting that it is expensive....

I want to share with you the benefits of Shakeology, but before I get into that, here's how it saved me money.

Once upon a time, when I first heard about Shakeology 2 1/2 years ago, I heard that it was supposed to speed up your results when paired with a workout. So my first thought - it's a protein shake. An expensive one at that! Not once, did I consider it a health shake.

Here are some tips to add Shakeology to your routine without breaking the bank: 

  1.  Skip the trip to Starbucks: An average coffee or some crazy grande pumpkin spiced latte is about $4, which Starbucks admits to an 80% markup! Yes, it may wake you up with the caffeine and sugar, but tell me this, how do you feel after a few hours? Do you crash? Do you need another cup? Makes you wonder, there has to be something else out there that's healthier. Um yes! Shakeology's newest flavor, Cafe Latte, can help you out with this one!

  2. Ditch the vitamins and supplements: Being healthy isn't cheap. Do you have multiple vitamins and supplements you take each day? Daily vitamin? Multivitamin? Avocado Egg Salad

I grew up with egg salad. When I learned it was unhealthy for you, I practically cried. I came across a way to make egg salad the healthy way and I immediately jumped on it. I wasn't sure of this recipe at first since I absolutely LOVE mayo but tried it anyway! And to tell you the truth, I don't crave the mayo version anymore!

ALSO, a short lesson on avocado compared to mayonnaise:

  • Nearly HALF the calories
  • Is "good" fat
  • Includes TWENTY vitamins and nutrients
  • Avocado oils help reduce cholesterol and fight against heart disease
  • Delicious and fresh!




  1. Crush up 2 hard boil eggs. 
  2. Take half an avocado and mash up with the 2 eggs. 
  3. Add salt and pepper to taste. 
  4. Put it on a whole grain bread of your choice! I personally love the sandwich thins.

Shrimp Stir-Fry


3 ingredients. 1 simple dish. Prep and cook time for this dish takes about 15 minutes so it's the perfect dinner for busy weeknights.



  1. Cook brown rice according to package instructions. 
    • Boil water, add rice, cook until tender.
  2. Steam broccoli
    • I usually buy the frozen steamable bags of vegetables for easy and healthy cooking! 
  3. Cook shrimp in 1 tablespoon of olive oil. 
    • Add salt and pepper to taste! 
  4. Combine 3 ingredients together and VOILA! 


This is my most recent favorite! Wegmans has this pack of frozen grilled vegetables. It includes eggplant, zucchini, red and yellow bell peppers, yellow and red onions. Mix that with brown rice and shrimp. SO many flavors in 1 dish!!!
